'Following Ernst’s training as a butler at The Ivor Spencer International
School for Butler Administrators/Personal Assistants in Dulwich
in
October/November 2001, he prepared and served a performance installation
providing recipes and table decorating ideas which utilised the
bodily
products of the host/performer. A romantic and intimate dinner arrangement
for two formed the centre piece of this master class in etiquette
and social
mores, which included expert tips on pre/serving and un/bottling
various
fluids and substance, with an opportunity for product tasting and
identification. The audience invariably became spectator and
participant, as they were individually invited to partake in the
prepared
meal.
Ernst Fischer has presented his work in many different contexts
